Seasonal Development Taster Menu

Each month our chefs develop an ambitious new tasting menu, driven by the micro-seasons of Anglesey. We work with what is to hand, using ultra-local ingredients to create refined dishes that make the most of what’s growing now.

We welcome guests from 18:00, serving each table individually (unlike our banquetting events).

The menu is typically 6 courses and takes approximately 2 - 2.5 hours.

Marius offers a wine pairing to each course as an additional extra.

£75 p/person, with an optional upgrade of a wine flight

Saturday 27th December 2025: Menu

The sandwiches Santa didn’t eat;

Mushroom parfait, charred Sourdough, red currant

Aged Anglesey Goat Mortadella, Tangzhong bun

Crab Crumpet, dill pickle, rarebit

The main courses, anything but a festive dinner;

Beef Brisket, potato, cucumber, pickle gel

Nefyn Seabass & Scallop mousse

Anglesey Goat, slow cooked leg, celeriac

Banana mousse, Pistachio, Roast banana skin ice-cream

Please note that this menu may be subject to minor changes based on ingredient availability.

Wine Flight Upgrade: £65 p/person

The bar will be open throughout the evening, and the last order will be 11pm.

Reservations in advance is highly recommended.
