Y marram’s Seasonal Development Menu
We are lucky at Y Marram. Being situated in our corner of Anglesey gives us direct access to an incredible range of produce, grown or foraged on our doorstep by a local network of passionate, knowledgeable growers and farmers. We get a front-row seat to the micro-seasons when produce is at its best and are often introduced to new ingredients that are fleetingly available.
The team are able to play with new or seasonal ingredients as they come through the door, which is the spirit of our Seasonal Development Menu. Held on the 4th Saturday of the month is a unique 5-6 course tasting menu that serves as a dedicated creative outlet for the team. It’s our chance to showcase the ambitious, refined, and playful side of our cooking.
A Space for Creativity
So, why do we do this? The simple answer is that the team live and breathe the micro-seasons (the brief window that ingredients are most impressive; think wild garlic in late spring or samphire popping up along the shore) of Anglesey and North Wales, but we don’t always get to share that with customers.
While our regular menus are built on seasonal ingredients, quality and simplicity, they can’t always keep up with the constant flow of incredible ingredients coming through our doors. The Seasonal Development Menu gives the team freedom to be ambitious and to challenge themselves by working with what is to hand and changing the usual menu structure.
Anglesey on a Plate
When we talk about seasonal cooking, we mean something more than just spring, summer, autumn, and winter. We’re talking about following the specific week the first wild garlic appears or the short window to access fish, shellfish or game. We’re talking about getting a call from a local grower about what’s ready or finding a box of something unexpected at the back door.
This approach harks back to the spirit of our old blackboard. Some of you might remember its capricious (it’s just jazz, Jay), ever-changing nature, which allowed for that kind of erratic spontaneity. This menu is a snapshot of that same spirit, combining our team's creativity with the best ingredients we can get our hands on, starting with Anglesey and working our way outwards.
It will be served as a multi-course (probably 5-6 courses) taster menu, with the informal, knowledgeable, and attentive care you’ve come to expect from us.
When: The 4th Saturday of every month.
Price: £75 per person.
Wine: An optional flight of paired wines is available for an additional £65.
